    使用するのは、岩手県産の銘柄豚・岩中豚をはじめとした銘柄豚で、
    そのやわらかさと上質な旨みを引き出すために、
    仕込みから揚げの温度管理まで一切の妥協を許さず、

    余計なことは抜きにして、ここは本当に美味しい。価格は驚くほど良心的なのに、クオリティは期待以上。小さなお店で、席数は8〜10席ほどのカウンター中心。私たちはランチタイムに伺いましたが、とても落ち着いた雰囲気で、店内は4人ほどのお客様だけ。静かで、まるで特等席のようにシェフの仕事を目の前で楽しめました。

    一番印象的だったのは、シェフがほぼ一人で全てを完璧にこなしていたこと。肉を切るところから部位の選定、丁寧な下準備、衣付け、塩や調味のバランス、油の温度管理、揚げるタイミング、休ませ方、そして最後のカットと盛り付けまで、その一連の流れがまるで職人のパフォーマンス。無駄のない動き、正確さ、美しさ。カウンターに座ってその工程を見るだけでも価値があります。助手の方とウェイトレスの方も感じが良く、店全体がとても心地よい空間でした。

    私たちはサーロインとヒレ、両方の部位を楽しめるセットを注文しましたが、それぞれの個性がしっかり感じられて素晴らしかったです。ご飯も非常に美味しく、炊き加減が絶妙。ピクルスはしっかり味が染みていて、サラダのドレッシングも完成度が高い。さらに追加で頼んだカツサンドは、最初は軽めのサイズかと思いましたが、実際はしっかり満足感があり、肉の厚みが本当に絶妙でした。

From selecting the cut, trimming and slicing the pork, preparing each ingredient, coating, seasoning, controlling the oil temperature, frying, resting, slicing, and plating — he handled nearly everything himself with incredible precision. Every movement felt deliberate, polished, and almost artistic. Sitting at the counter and watching that level of craftsmanship alone was worth the visit. The assistant and waitress were also warm and efficient, adding to the charm of this small but highly impressive team.

    We ordered both the sirloin and pork fillet, which was the perfect way to enjoy the differences between the two cuts. Both were excellent. The rice was particularly impressive, perfectly cooked and memorable on its own. The pickles were deeply flavorful, and even the salad dressing stood out. We also tried the sandwich, initially expecting something small or light, but it turned out to be surprisingly satisfying, with beautifully thick pork cut to just the right balance.

    As a traveler from Sydney, Australia, and fairly familiar with Tokyo, I am glad we found this hidden gem and it is worth the trip. We originally planned to come back one more time before leaving Tokyo, but unfortunately it was already fully booked.     前からインスタで気になっていたけど、実店舗オープンしてやっと土曜日のランチに食べログから予約して訪問

    場所は奥渋ともいえる場所で、駅から少し歩くけど、とじないカツ丼で有名なかつどん屋 瑞兆が入るビルの2階に。カウンター席のみだけど、お肉をカットしたり衣をつけて揚げてる様子が目の前で見れて楽しい。

    頼んだのはひれかつ定食(180g)ほんのりピンク色のお肉は柔らかくてとってもジューシー。塩や本わさびで食べると肉の旨みが感じられる。羽釜で炊いたご飯や赤出しも美味い。これは今後大人気になる予感…

    次はカツカレーも食べてみたい。

    I'd been curious about this place on Instagram for a while, but I finally got to visit after they opened a physical store, making a reservation through Tabelog for Saturday lunch.

    The location is in what you could call the "Okushibu" area, a short walk from the station, on the second floor of the building that also houses Zuicho, a katsudon restaurant famous for its katsudon that doesn't have a lid. There are only counter seats, but it's fun to watch them cut the meat, coat it in batter, and fry it right in front of you.

    I ordered the pork fillet cutlet set meal (180g). The slightly pink meat was tender and incredibly juicy. Eating it with salt and real wasabi really brought out the flavor of the meat. The rice cooked in a traditional iron pot and the red miso soup were also delicious. I have a feeling this place will become very popular…

    The best tonkatsu I’ve ever had. Chefs are masters of their craft and really awesome people. We had the mixed loin and fillet and the sandwich, and both were absolutely amazing.
